Buffalo Cauliflower Bites

Back in the day, Rocky used to love Buffalo chicken wings but he was ready to put that experience aside when we started this plant-based lifestyle. After perfecting these in the kitchen, I surprised him one day with these crispy cauliflower bites, coated with Buffalo sauce. He loved them. The crispy texture feels enough like chicken to give that same taste experience, but they are healthy and plant-based. You really don’t have to give up taste with this way of life.
Ingredients
One head of fresh rinsed cauliflower
For Crisp Coating
1 cup of flour
2 cups of crushed plain corn flakes
1/4 tsp. Made Right Ground Pepper
1/2 tsp. Made Right Garlic Powder
1/4 tsp. paprika
1/8 tsp. cumin
1 Tbsp. nutritional yeast
For Batter
1 container of vegan egg substitute
1/2 cup of plain almond milk
1/2 tsp. of Made Right All Purpose Seasoning
1/2 cup of water
Instructions
Cut or break apart the head of cauliflower into florets and place them in a bowl and set aside.
In a large bowl, combine the flour, Made Right Black Pepper, the Made Right Garlic Powder, paprika, cumin and nutritional yeast, then add the vegan egg substitute, almond milk and water. It should look like pancake batter.
For the coating, put the flour, crushed cornflakes, spices and nutritional yeast in a big bowl and mix to combine.
Dip cauliflower into the batter, and then coat with the cornflake mixture. As a quick option you can add the coating into a gallon sized zip-lock bag and shake to get the cauliflower evenly coated.
