Cauliflower Crust Pizza

If you are trying to keep the carbs low, this pizza crust is a great option. I like to combine toppings and include things like mushrooms, vegan beef crumbles, olives, peppers, tomatoes, and spinach. Make your own masterpiece using your favorite ingredients.
Ingredients
Pizza Crust
1 medium-large head cauliflower, “riced” (instructions follow – yields 4 cups riced cauliflower)
1/4 cup egg substitute
1/4 tsp. Made Right Sea Salt
3 Tbsps. of vegan Parmesan cheese
1 tsp. dried oregano
1 tsp. Made Right Garlic Powder
1 tsp. dried basil (or fresh chopped basil)
2 Tbsps. of minced garlic (or substitute 1 Tbsp. of garlic powder)
1 heaping Tbsp. cornstarch to help bind the crust
1 Tbsp. cornmeal to keep the dough from sticking to the parchment paper
Toppings
Gather your favorite toppings. Cook veggie beef crumbles if you are using them.
Red Sauce Pizza
Use one small can of puréed tomatoes or a jar of store-bought vegan pizza sauce
Vegan Pesto
Combine fresh basil leaves (removed from the stems)
Vegan Parmesan cheese
1/4 cup olive oil
2 peeled cloves of garlic
Run this through a food processor or blender, or you can press ingredients together with a fork until everything is combined.
Alfredo Pizza Sauce
My Cauliflower Alfredo Sauce is great on a white pizza and pasta.
4 cups of cauliflower florets (about 1 medium cauliflower), cooked in a small amount of water and drained
1/2 cup jarred artichoke hearts (chopped with outer leaves and hard pieces removed)
1/2 Tbsp. coconut oil
1 Tbsp. minced garlic
1/2 cup plain unflavored almond milk
1/4 cup nutritional yeast
1 Tbsp. fresh lemon juice
1/2 tsp. Made Right Garlic Powder
1/2 tsp. onion powder
Instructions
Preheat the oven to 400°.
Rice the cauliflower using a food processor or grater, then cook lightly by steaming or microwaving until soft. Let cool completely, then squeeze out excess moisture using a towel or cheesecloth.
In a bowl, combine the riced cauliflower, egg substitute, vegan Parmesan cheese, cornstarch, minced garlic, oregano, basil, garlic powder, and sea salt. Mix until a dough-like consistency forms.
Line a baking sheet with parchment paper and sprinkle with cornmeal. Press the mixture into a thin, even pizza crust shape.
Bake for 20–25 minutes, until the crust is golden and firm.
Remove from the oven and add your choice of sauce (red sauce, vegan pesto, or Alfredo sauce) and desired toppings.
Return to the oven and bake for an additional 10–15 minutes, until heated through and slightly crisp.
Remove from the oven, let sit for a few minutes, then slice and serve.
